Chorizo and Cheese Egg Muffins
Chorizo and Cheese Egg Muffins - Try this super easy recipe, these are perfect for breakfast or a lunch time snack use Manchego cheese for a real Spanish Taste or a mature Cheddar is a good alternative.
Ingredients, Makes 12 Muffins
1 Chorizo sausage, sweet or spicy, diced
1 large red chili, deseeded and thinly sliced
1 clove garlic, finely chopped
8 large eggs
1 tsp ground paprika
1/2 tsp ground cumin
3 oz of Manchego or cheddar cheese, grated
1/4 cup 35g roasted peppers
1 tbsp flat leafed parsley, chopped
Chorizo and Cheese Egg Muffins
Method
Preheat oven to 200ºc
Spray a muffin tin generously with cooking spray, or line the tin with silicone cupcake liners.
In a non stick frying pan add the chorizo, chili and garlic and gently fry for about 8 - 10 minutes. Allow to cool for 5 minutes.
Crack the eggs in a large bowl and add the cumin, paprika, salt and pepper and whisk well until combined.
Add an even layer of the egg mixture to each muffin tin/case
Add and even layer of the Chorizo mix to each tin.
Add the grated cheese, slices of roasted peppers and a sprinkle of parsley.
Top with the remaining egg mixture.
Bake in the preheated oven for about 12 minutes, use a toothpick to check they are cooked.
Enjoy hot or store in the fridge these will keep well in the fridge for 1 week if well sealed
To reheat microwave for 30 seconds
To freeze - seal well and freeze for up to 3 months.
