Marinated Lamb Cutlets Recipe
Lamb Cutlets Recipe - These lamb cutlets are delicious, but you could also use the marinade for other meat, such as pork chops or try it with chicken drum sticks or wings.
You will often find these served as a Spanish Tapas, but of course can turn it into a main meal.
You can grill, fry or oven bake these and they would be perfect for that summer BBQ.
6 lamb cutlets, trim off all excess fat
For the Marinade
2tsp paprika, sweet or hot
1 clove garlic, crushed (optional)
1 chopped red chilli
1/2 bunch of chopped fresh mint
a pinch of salt
4tsp olive oil
To prepare the Marinade
Mix all the ingredients for the marinade together and brush liberally all over the cutlets.
Place in the fridge and marinate for at least 1 hour or up to 2 days.
To cook, either grill under a hot grill or bake in the oven for 10 minutes until tender, you could also cook them over a BBQ for about 10 minutes or fry in hot oil for 2 minutes on each side if you like your meat pink, or 4 minutes if you like it well done.
These cutlets are lovely on their own and don´t really need a sauce but for that extra added touch serve with a dip of creme fraich with a puree of dried apricots.
Mix 8oz of Creme Fraiche with 20oz dried apricots, chopped in a food processor, and add black pepper to taste.
Serve the lamb cutlets as part of a tapas meal garnished with fresh mint and slices of lemon or turn into a main meal by adding a side salad and potatoes of your choice, or serve with Spanish Rice.
