Strawberry Flan Recipe - This lovely rich dessert is a variation of the traditional Spanish dessert called Flan. Instead of vanilla, this flan is flavoured with fresh strawberries.

Spanish flan - The name comes from the Old French word, “flaon,” from the Late Latin word, “fladon,” which is derived from the Old High German word “flado,” which means a flat cake or object. below is a simple Spanish Flan Recipe.

Strawberry season in Spain,  there is an early strawberry season that lasts from November to April, the bulk of Spanish strawberry production in Huelva takes place from January or February to July.

Did you know - strawberries are non-climacteric fruits, which means, they no longer ripen once they have been collected, unlike apples or bananas.

Keep strawberries in the refrigerator, ensure that they are kept at a constant cold temperature, never lower than 2ºc, and not higher than 6ºc. Again, and keep them away from foods that emit strong odours.

Below you will find two slightly different recipes, one containing eggs which requires cooking the other even easier which contains no eggs and requires no cooking.   Try them both...

Strawberry Flan 1

Ingredients 

300 grams strawberries

A can of condensed milk

6 eggs

150 grams of sugar

Liquid caramel or 150 grams more sugar if you want to make it homemade

Method

Preheat the oven to 180ºC

Wash the strawberries, removing the leaves and stem, in a bowl add the strawberries, eggs, condensed milk and sugar.

With a blender, whisk the ingredients until there are no lumps left.

CARAMELIZE THE SUGAR FOR TOPPING

The caramel is applied to the bottom of the pan/s to be used to cook the custard.

Homemade caramel - in a pan over medium heat add 150 grams of sugar and 2 tablespoons of water. Mix continually with the back of a wooden spoon until it becomes the consistency of caramel, remove from the heat and allow to cool to room temperature.

Add the caramel to the bottom of the individual dishes, allow to cool a little then add the milk/strawberry mixture. 

Cover each ramekin/dish with tin foil.

Place the dishes with the mixture inside a larger baking bowl or large deep oven proof dish. 

Add very hot water to the pan. The ramekins should be submerged approximately 3/4 in the water. In Spanish, a “water bath” is called a “bano Maria.”.

Carefully place the pan on to the middle shelf of the oven and bake for 30 minutes. After 30 minutes.  To check that the strawberry flans are ready use a  toothpick if it comes out clean it is ready.  Carefully remove each ramekin from the water, uncover and to allow to cool.

Once cool, place in refrigerator to chill. When you are ready to serve, run a paring knife around the outside of each ramekin to loosen the flan. Then, place the serving plate on top of each one and flip it over. It may be necessary to tap the ramekin to force the flan to fall out onto the plate. Garnish with mint and a few slices of strawberry.

Strawberry Flan 2, without eggs and no cooking time

80 grams sugar

15 grams Gelatin sheets

100 ml milk

250 ml of very cold cream 

Method

Soften the gelatin, put the sheets in a dish and soak in cold water for about 10 min. Squeeze it to drain excess liquid

Wash and chop the strawberries

Take half the strawberries and blend in a food processor.  This strawberry custard will have pieces of strawberry inside, so the rest of the strawberries will be cut into very small pieces.

Add the sugar and mix well.

Heat the milk, add the well-drained gelatine leaves make sure the gelatine has completely dissolved and there are no lumps in the milk.

Whisk the cream, then mix it with the milk, crushed strawberries and chopped strawberries.

Prepare some individual moulds or if you prefer you can use a large mould. Fill with the strawberry custard mixture.

Place in the fridge for about 3 hours until solidified.

Decorated with a few pieces of fresh fruit, and serve with condensed milk or whipped cream.
