Stuffed Baked Salmon Recipe

Stuffed Baked Salmon Recipe : Salmon is extremely popular here in Spain, and this stuffed baked salmon dish makes the most of its rich flavour. Filled with sun-dried tomatoes, fresh basil, and lemon, it’s healthy, delicious, and ideal for a dinner party or a special meal at home.

Ingredients (Serves 4)

  • 2 large salmon fillets (about 500 g / 1.1 lb)
    If you cannot find large fillets, use smaller ones and prepare individual parcels.

  • 10 sun-dried tomatoes

  • 1 egg

  • Fresh basil (a handful, finely chopped)

  • 1 large lemon

  • 2 slices of stale white bread

  • Extra virgin olive oil

  • Salt and pepper

Stuffed Baked Salmon Recipe - Method

  1. Prepare the sun-dried tomatoes
    Soak the sun-dried tomatoes in olive oil the night before to soften them.

  2. Prepare the lemon
    Wash the lemon thoroughly and slice it evenly.

  3. Make the stuffing

    • Chop the soaked sun-dried tomatoes into small pieces and place them in a bowl.

    • Add two tablespoons of freshly chopped basil.

    • Grate the stale bread into breadcrumbs and mix with the tomatoes and basil.

    • Beat the egg and add it to the mixture.

    • Combine everything into a smooth paste using a handheld blender.

  4. Assemble the salmon

    • Place one salmon fillet on a clean work surface, skin side down.

    • Sprinkle with salt and arrange half of the lemon slices on top.

    • Spread the stuffing paste evenly over the lemon slices.

    • Place the second salmon fillet on top, skin side up, and cover with the remaining lemon slices.

  5. Prepare for baking

    • Tie the fillets together with kitchen string to keep the stuffing secure.

    • Place in an ovenproof dish greased with olive oil and drizzle a little extra oil on top.

  6. Bake

    • Preheat your oven to 180°C / 350°F / Gas Mark 5.

    • Bake for 30 minutes, or until the salmon is cooked through.

  7. Serve
    Garnish with fresh lemon wedges and serve with your choice of boiled potatoes, chips, or rice.
