Stuffed Baked Salmon Recipe : Salmon is extremely popular here in Spain, and this stuffed baked salmon dish makes the most of its rich flavour. Filled with sun-dried tomatoes, fresh basil, and lemon, it’s healthy, delicious, and ideal for a dinner party or a special meal at home.
Ingredients (Serves 4)

2 large salmon fillets (about 500 g / 1.1 lb)
If you cannot find large fillets, use smaller ones and prepare individual parcels. -
10 sun-dried tomatoes

1 egg
-
Fresh basil (a handful, finely chopped)

1 large lemon
-
2 slices of stale white bread

Salt and pepper

Stuffed Baked Salmon Recipe - Method

Prepare the sun-dried tomatoes
Soak the sun-dried tomatoes in olive oil the night before to soften them. -
Prepare the lemon
Wash the lemon thoroughly and slice it evenly. -
Make the stuffing

Chop the soaked sun-dried tomatoes into small pieces and place them in a bowl.

Add two tablespoons of freshly chopped basil.

Grate the stale bread into breadcrumbs and mix with the tomatoes and basil.

Beat the egg and add it to the mixture.

Combine everything into a smooth paste using a handheld blender.

Assemble the salmon

Place one salmon fillet on a clean work surface, skin side down.

Sprinkle with salt and arrange half of the lemon slices on top.

Spread the stuffing paste evenly over the lemon slices.

Place the second salmon fillet on top, skin side up, and cover with the remaining lemon slices.

Prepare for baking

Tie the fillets together with kitchen string to keep the stuffing secure.

Place in an ovenproof dish greased with olive oil and drizzle a little extra oil on top.

Bake

Preheat your oven to 180°C / 350°F / Gas Mark 5.

Bake for 30 minutes, or until the salmon is cooked through.

Serve
Garnish with fresh lemon wedges and serve with your choice of boiled potatoes, chips, or rice.
