Spanish Marinated Beef Kabob Recipe - Brochetas de Ternera
Spanish Marinated Beef Kabob Recipe - Brochetas de Ternera. Chunks of beef are marinated in Spanish sweet paprika, garlic and oil, then grilled on the barbecue. After cooking, drizzle with a zesty dressing over the top. Simple and easy, but oh so tasty!
Ingredients
4 cloves garlic
2 sprigs of flat leaf parsley
2 lbs beef, cut into 1.5 inch cubes
1 Tbsp Spanish sweet paprika
4 oz (125 ml) olive oil
Dressing
1 Tbsp Spanish sweet paprika
2 Tbsp red wine vinegar
4 oz (125 ml) olive oil
1 sprig rosemary for garnish (optional)
Method
Peel and finely chop the garlic and parsley. Place the beef cubes in a glass or ceramic bowl. Sprinkle paprika on top and add garlic, parsley and olive oil. Mix thoroughly. Cover with plastic wrap and refrigerate for at least 1 hour, and up to 3 hours.
After marinating beef, thread onto metal skewers, leaving space between the cubes. Grill on a hot barbeque, turning often to cook evenly.
To make the dressing, beat the paprika, vinegar and oil with a wire whip to blend thoroughly.
Remove the kabobs from barbecue when beef is cooked.
Place on plates and drizzle dressing on top. Sprinkle rosemary on top. Serve with rice.
