Bolitas de Arroz Recipe - This simple recipe is so easy and a great way to use up left over rice with this delicious combination of rice and melted cheese. This is a popular tapas/starter dish especially in the Rojales area.
Rice balls are a versatile treat that can be served as an appetizer, side dish, or even as a main dish.
INGREDIENTS
150g rice
Salt
Pepper
150g grated cheese (Gouda, Manchego or Cheddar, for example)
1 tsp Oregano (optional)
1 tsp Basil (optional)
2 eggs
2 tbsp. Plain flour
5 tbsp. bread crumbs
oil for frying
sweet and sour sauce, to taste

METHOD
Use left over rice or start from scratch by covering the rice with salted water, bring to a boil and cook over very low heat for about 20 minutes.
Remove the rice from the saucepan, allow it to cool slightly and mix with the grated cheese, pepper, basil and oregano (if using) and an egg.
If you prefer to use mozzarella make a hole in the ball insert a mozzarella cube into the hole and close the ball.
Allow the mixture cool for 30 minutes. Then wet your hands and form small balls.
Dredge the balls in flour. Beat the second egg. Dip the balls in the beaten egg and coat with breadcrumbs.
Fry the rice balls for about 5 minutes in hot oil until golden brown.
The best way to eat the rice balls is hot and accompanied by sweet and sour sauce.
