Spanish Apple Cake Recipes, Bizcocho de Yogur con Manzana

Try these Spanish apple cake/bread recipes, healthy and delicious. Baking with olive oil is easy not to mention a healthy option. 

Spanish Apple and Yogurt Cake, recipe 1

Prep time: cook time: Total time: Serves: 8

Ingredients

1 lemon yogurt

1 yogurt cup of olive oil (Virgin and extra virgin olive oils are the only ones that will bring any health benefits to the recipe)

2 yogurt cups of sugar

3 yogurt cups of flour

3 eggs

1 packet of baking powder (Spanish baking power comes in packets)

1 large green apple diced small or 1.5 cups of fruit (such as grapes, or berries)

Butter

Flour

Powdered sugar (azúcar glacé, found at many supermarkets)

Method

In a large bowl beat the eggs and sugar.

Add the flour and baking powder (sift if possible) and mix very well (use an electric mixer at a medium speed if you have one!)

Now add the yogurt and oil and continue mixing until the batter is smooth.

Butter and flour the pan (use a 9×9 round) and pour in the batter.

Sprinkle the fruit on top and it’s ready to go in the oven., The fruit may sink to the bottom of the cake during cooking, this is normal, so do not worry.

Bake at 170 Celsius/340 Fahrenheit for about 30 minutes. 

To check when the cake is cooked insert a toothpick in the centre, if it comes out completely clean, its cooked.

Let the cake cool and top with powdered sugar.

Spanish Apple Cake Recipes, Option 2

1.5 cups (375 gms) of cake flour (harina para pastel) or Plain flour

1/4 cup of spelt flour optional (harina de espelta) - if not just add another 1/4 cup of all-purpose flour

1/4 teaspoon of salt

2 teaspoons of baking powder

3/4 cup of granulated sugar

1/4 cup honey optional - if not just add another 1/4 cup of granulated sugar

3 large eggs

1 cup of full-fat unsweetened Greek yogurt

2/3 cup of Spanish extra virgin olive oil 

1 large apple diced small 

Powdered sugar to top the cake unless making the crumb below

Apple Olive Oil Cake

Method

Preheat your oven to 375°F and then grease and flour a 9½ cake pan.

In a medium sized bowl mix together the flour, spelt flour, salt, and baking powder.

In a separate bowl, beat the sugar, honey, and eggs on medium-high speed with a hand mixer for about two minutes.

Now, whisk in the Greek yogurt on low speed.

Finally, add the olive oil by slowly drizzling it in while mixing on low.

When combined, fold in the flour mixture by hand using a rubber spatula. Stop mixing as soon as everything is combined-- you don't want to over mix.

Fold in the diced apple just until incorporated.

Pour the batter into the greased and floured cake tin

Bake about 50 minutes in a preheated (375°F) oven (or until a toothpick inserted in the middle comes out with only a few crumbs).

Take your cake out of the oven and let cool for at least 20 minutes before removing from the cake tin.  before serving dust with powdered sugar (unless you used the crumb topping, in which case the additional sugar isn't necessary!)

You could for a special treat add a Crumb Topping

1/4 cup butter room temperature

1/2 cup brown sugar

1/4 cup flour

1 Tbsp cinnamon

In a small bowl, mix together the flour, cinnamon, and sugar.

Add the room temperature butter and mash with the back of a fork. You want to make a chunky paste with plenty of crumbs.

Cover the cake with this mixture.
