Spanish Chicken in White Wine and Garlic Sauce Recipe
Chicken in White Wine Sauce Recipe - Try this quick and easy traditional Spanish pollo en salsa recipe that the whole family will love.
Ingredients
1lb Boneless chicken breasts, thinly sliced
1 whole head of garlic
3tbsp Olive Oil
1 cup chicken stock or 1 chicken stock cube and cup of water
3/4 cup of white wine
3 bay leaves
Salt and pepper to taste

Method
Pat the chicken breasts dry and season with salt and pepper.
Separate the garlic cloves but do not peel, crush each clove with the back of a knife, they should be bruised but not fully out of the skin.
Heat the olive oil in a large heavy based frying pan
Sear the chicken breasts on both sides, do this in batches if need be, remove from the pan.
Add the crushed garlic to the hot oil and cook for about 5 minutes or until golden brown, remove from the pan and take the skin off.
Puree the garlic with the chicken stock in a blender, or mash the garlic with the back of a fork and whisk in the stock.
Place the chicken back to the pan and cover with the garlic and stock mixture, add white wine and bay leaves, cover and simmer for 10 minutes.
Uncover and simmer for a further 10 minutes.
If you feel the sauce needs thickening use 2 tablespoons plain flour, mix this with some water and gently stir into the sauce.
Once the chicken is fully cooked, turn off the heat and allow to sit for about five minutes, remove the bay leaves before serving.
Serve with your choice of potatoes or rice and fresh crusty bread.
