Spanish Lentil Soup with Chorizo

Spanish Lentil Soup with Chorizo

SPANISH LENTIL SOUP WITH CHORIZO

Spanish Lentil soup with chorizo is a very tasty and nutritious dish that originated in Avila (in the autonomous community of Castile and León), and soon expanded all over Spain. It is a very popular soup and simple to make.

This is often served as part of a Menu del Dia and is gorgeous.

Ingredients

1cups dry green lentils

tablespoons olive oil

small onion, chopped, you can also add red/green/yellow peppers if you wish.

garlic clove, minced

cups water

1 can shopped tomatoes

1tsp sweet Paprika

1 Bay leaf

medium potato, cut into chunks slightly bigger than bite size

2 -3 small chorizo sausages

Spanish Lentil soup

Method

Soak the lentils in cold water for an hour prior to cooking.

Heat olive oil on low heat, add onion and garlic. Sauté until onion begins to look translucent and garlic browns a little.

Add water and lentils, bring to a boil and reduce to a simmer. Add potato.

Add chorizo, in one inch slices.

Cook until lentils get soft and expand and chorizo filling strains against natural casing, about 40-45 minutes.

Serve warm with crusty bread.

Did you know - Lentils are low in calories, high in nutrients such as folate and magnesium, calcium, iron and are full of natural fibre, just one cup of cooked lentils contains half of the 25 to 30 grams of your recommended daily intake.

They area also a good source of polyphenols which offer protection offer against everything from the suns UV rays and radiation to osteoporosis, heart disease, and cancer. A study even found that polyphenols can help you live longer.
